Earlier this week  I was munching on graham crackers with the kids and noticed that Honey Maid had a recipe that looked fantastic, so I decided to try it out. I changed up a few ingredients, and after adding in some extras and taking others out, I wanted to share it!

I don’t know about you, but I LOVE icecream sandwiches! They have always been a favorite – the soft and sweet cookies filled with ice cream…best of both worlds. So, these homemade Frozen Yogurt Bars made with fresh berries, bananas, and greek yogurt, is a healthy & delicious treat that everyone will enjoy.

Berries & Banana Ingredients

When I was at Costco they had organic strawberries on sale so I went ahead and grabbed these then rinsed them off so they’ll last longer.

Berries & Banana Step 1

First, line a 9 x 9 baking pan with foil, then place quartered graham crackers along the bottom, the slice up fruit in a separate bowl.

Mash or blend the fruit until it is the consistency that you like. I wanted to have bigger pieces of the fruit, so I used a Mix n’ Chop tool to mash the fruit together. You can also use an immersion hand blender if you would prefer to have all of the fruit blended into smaller pieces. With the immersion hand blender you can also whip up the heavy cream. Once it reaches the thickness of whipped cream add in sugar and vanilla, then blend for 5-10 seconds or fold it in with a spatula.

Add the Greek Yogurt and whipped cream to the fruit mixture and mix together. Then pour over the graham crackers and even out the mixture.

Top the mixture with quartered graham crackers until completely covered, then place in freezer for approximately 4 hours. Once it is frozen you can take out the entire piece and cut in to pieces. Allow a few minutes for it to thaw out before eating.

Berries & Banana Frozen Yogurt Bars

Ingredients

  • 10 1/2 Graham Crackers split in to quarter pieces
  • 1/2 cup fresh strawberries
  • 1/2 cup fresh banana
  • 1/3 cup fresh blueberries
  • 1 cup plain Greek Yogurt
  • 1/2 cup heavy whipping cream
  • 1 to 2 tsp cane sugar
  • 1 tsp vanilla extract

Instructions

  1. Line 9 x 9 baking dish with foil.
  2. Place graham crackers along the bottom of the baking dish.
  3. Mash or blend the fresh fruits together in a separate bowl.
  4. Whip heavy cream, adding in sugar and vanilla once you have whipped to desired consistency.
  5. Stir whipped cream and Greek yogurt in to the fruit mixture, then spread over the graham crackers.
  6. Top the mixture with graham crackers, then place in the freezer for 4 hours.
  7. Once the dessert is frozen you can use lift the entire block of bars out of the dish to cut.
  8. Allow to thaw out for a few minutes.
