Healthy Pineapple Whip Popsicles!
Yum. These popsicles are so refreshing and fruity. With only 3 simple ingredients needed, they are easy and healthy too!
This recipe is basically for delicious pineapple whip, but then taking it a step further and freezing it in popsicle molds. Mmm. A slightly creamy, smooth, frozen pineapple. Perfect for a summer treat!
As I mention in the pineapple whip recipe, you can try mixing up different fruit combinations, using different kinds of milk, and different sweeteners too. Frozen mango would be a great addition!
Stainless Steel Pineapple Slicer, Corer $3.65 shipped
I used canned light coconut milk, honey, and pre-frozen pineapple chunks this time around. You can use a fresh pineapple too! See how to freeze pineapple.
A high power blender or food processor comes in handy with this recipe. If you’re lucky enough to have a Vitamix or Blendtec blender, it should get the job done. If your blender or food processor is struggling with it, I suggest mixing up this treat in separate smaller batches.
Then just spoon the pineapple whip into your ice pop molds and freeze. This recipe makes about 5-6 cups of pineapple whip; the amount of popsicles you get will depend on the size of your molds.
Enjoy a frozen pineapple pop on a hot summer day!
Ingredients
- 1 fresh pineapple (peeled, cored and chopped) or about 7 cups frozen pineapple chunks
- 1 cup milk (almond, coconut, or dairy)
- 1 tablespoon honey
Instructions
- If using a fresh pineapple, cut it up and freeze the chunks overnight. Or you can purchase pre-cut pineapple, frozen pineapple chunks, or freeze canned pineapple chunks in an ice cube tray. (Many other fruits would also work well with this recipe!)
- Combine the frozen pineapple, milk, and honey in a high speed blender (like Vitamix or Blendtec, or try a food processor) until it reaches a smooth, thick frozen sorbet consistency. You may need to blend it in two batches if your appliance is struggling.
- At this point, you have a delicious pineapple whip that you can pipe into 4-6 dishes and serve immediately. For popsicles, spoon the pineapple mixture into popsicle molds and freeze overnight, or until solid.

Tovolo Groovy Ice Pop Molds, Set of 6 $11.01
These ice pop molds are great! Sturdy and great quality. They are fairly large though, so I usually use them for adult-size popsicles and use a smaller popsicle mold for the kids.
